    • Kale and Quinoa Salad With Lemon Tahini Dressing

      I was craving this salad that I usually order at a local restaurant and instead of getting take out, I decided to make it myself. This salad is packed full of healthy ingredients that work so well together. They serve this salad with a lemon tahini dressing and since I have been unable to find any in stores, I decided to make the dressing myself as well. It came out delicious and despite my children’s grumbling when they saw what we were having for dinner, they actually enjoyed it.

      I looked up recipes for the dressing on-line and ended up combining a few different recipes to make the one I used. I must say while I doubted it would be as good as the one I loved from the restaurant, it was. Isn’t that the best feeling? Go me!

      On a side note, I just learned that it is brussels sprouts and not brussel sprouts. Did you know this or am I the only one? Anyway, let’s make this healthy delicious salad.

      Ingredients:

      Kale, shredded

      1/2 cup quinoa

      1 lb brussels sprouts

      3 tbsp olive oil

      8 oz. chick peas

      1 – 1 1/2 lbs boneless chicken

      Sunflower seeds

      Salt and pepper

      Lemon Tahini Dressing

      Prepare the dressing and refrigerate until needed.

      Preheat oven to 400 degrees. Clean and halve the brussels sprouts. In a mixing bowl combine sprouts with 3 tbsp. olive oil, salt, and pepper.

      Spread evenly on a cookie sheet and cook for 25-30 minutes flipping occasionally. When sprouts are roasted and cooked through, set aside.

      Start cooking the quinoa as instructed on package. Set aside when done.

      Prepare chicken by cutting into thin strips. You can either grill or broil, I chose to broil with just a little salt and pepper on them.

      Once all of the ingredients are cooked you can assemble your salad.

      In a large bowl combine all of the ingredients except dressing. I didn’t put a quantity on the sunflower seeds because you can use as many as you prefer.

      Top with the yummy homemade dressing and enjoy!

    • Cauliflower Salad

      If you are looking for a healthier alternative to potato salad, try using cauliflower. I have made mashed cauliflower numerous times but never thought to use cauliflower in place of potatoes for potato salad until last night. It went perfectly with my homemade pulled pork and was delicious! The added bonus was my son that won’t eat potatoes ate the cauliflower, Mom for the win!

      I mixed together all the same ingredients I would for my potato salad except used cauliflower in place of potatoes. If you feel like using potatoes, these measurements were for one head of cauliflower so you may need to increase them depending on how many potatoes you use.

      Ingredients:

      1 head of cauliflower

      1/2 cup mayonnaise

      1 tbsp. spicy brown mustard

      1 tbsp. apple cider vinegar

      Celery – shopped

      1 hard boiled egg

      Red onion – chopped

      Salt and pepper to taste

      Whisk the mayonnaise, mustard, vinegar, salt and pepper together in a mixing bowl and set aside.

      Cut up the cauliflower florets into small bite size pieces. Chop the celery, onion, and egg and put aside.

      Bring water to a boil in a medium sized saucepan. Add the cauliflower and keep boiling for about 4-5 minutes or until it is slightly soft. Drain the cauliflower and run under cold water in a colander to cool.

      Add the cauliflower, celery, red onion, and egg to the mayonnaise mixture and mix well. Refrigerate for an hour or so for best flavor.

      Yum!!

    • Easy Chicken Salad

      Chicken salad is such an easy dish to whip up, and there are so many different ways to make it. Today I decided to add celery and red grapes to the salad. When I don’t add grapes, I usually add a little red onion. And then sometimes, just celery, it all depends on what I’m in the mood for or what I have in the house.

      Today I also decided to have the chicken salad on a bed of lettuce, but it is also perfect in a sandwich or on a croissant. I prefer to make my own because I like to use low fat mayonaise to cut calories a little bit.

      Here is what you need to make chicken salad:

      2 lbs. boneless chicken breast

      1/2 cup mayonaise

      1 tbsp. spicy brown mustard

      1 tbsp. apple cider vinegar

      salt

      pepper

      stalk of celery chopped

      grapes (red or green)

      Cook chicken breasts in a glass baking dish at 375 degrees for about 35 minutes or until no longer pink. Let cool.

      Whisk together mayonaise, mustard, vinegar, salt and pepper in a mixing bowl.

      Chop up a stalk of celery and halve the grapes.

      Cut up the chicken into cubes and mix all ingredients well.

      I prefer chicken salad cold so I refrigerate for at least an hour. Enjoy!!
