I know what you are thinking, and I honestly can not believe that I am not only posting this recipe, but actually really like it. If you are looking for a true Mac and Cheese recipe, move on to the other post I have in my blog because this is not it. However, if you are looking to satisfy your craving with a healthy high protein alternative, then look no further!
I am a Mac and Cheese girl, and am pretty sure it is my favorite food. Like, death row last meal favorite food. With that said, I rarely eat it because of how sinful and fattening it is. This recipe has not replaced a good buttery cheesy bowl of pasta, but it has allowed me to eat “mac n cheese” often without the guilt, calories, and fat.
This is the easiest four ingredient, non-gourmet sauce that can either go on regular pasta, healthy pasta (I use farro pasta most of the time), or even as a sauce for vegetables. It actually makes a ton of sauce too, probably enough for a pound of pasta.
Ok, let’s get cooking?
Ingredients:
1 1/2 cups low fat cottage cheese
1/2 cup low fat shredded cheddar
1/2 cup low fat milk
1 packet of mac n cheese powder (I use Annie’s because it’s more natural)

In a small blender combine all the ingredients.

Pulse for about 30 seconds until smooth.

Poor over your cooked pasta or vegetables and that’s it! As I mentioned it makes a lot and you will most likely not need it all.
You can also just use the pasta that comes in the box if you want.

Or use whatever you prefer, I used farro pasta and some broccoli.
