Pomodoro means tomato in Italian, and that’s exactly what this sauce is. A simple, yet delicious, tomato sauce. While a classic red sauce is also a tomato sauce, this has fewer ingredients and is easier to make. They are the same, but also quite different. If I am going to make meatballs or chicken parmesan, then I will use my mother’s red sauce recipe, which you can also find in my blog. However, if I am looking for a simple sauce to add to pasta with a nice chuck of burrata on top, this is the recipe I turn to.
Ingredients:
1 tbsp olive oil
1 tbsp butter
1/2 medium onion, chopped
2 tsps minced garlic
Salt
Pepper
2 – 28oz cans whole peeled tomatoes
6-8 basil leaves
In a medium to large saucepan heat the olive oil and butter. Add the onions and saute for 3 minutes. Add the garlic and saute for another minute. Season to taste with salt and pepper.
Transfer the onion/garlic mixture to a blender. Add the cans of tomatoes and basil. For this batch I did not have any fresh basil so I used dry basil.
Blend until smooth, it shouldn’t take long, less than a minute. The blender I typically use when I am home must be larger, and I was really pushing it with this one. I somehow surprisingly did not end up with tomatoes all over the kitchen. I am not sure how large this blender is, but you may want to use a larger one.

Transfer tomato mixture back to the saucepan and simmer for 20 minutes. That’s it!
Serve over your favorite pasta, add a nice chunk of burrata or other cheese on top and enjoy! Mangia!
