What better on a raw, rainy day than a hearty soup that warms you inside. This soup is low fat, loaded with protein, easy to make, and delicious. What else could you need? Maybe a nice roll or piece of bread to dunk in it, that’s about it.
Let’s make some soup!
Ingredients:
1 tbsp olive oil
1 lb lean ground turkey
1/2 medium onion, chopped
1 tsp minced garlic
1/8 – 1/4 tsp red pepper flakes
1/2 tsp black pepper
1 tsp dried oregano
1/2 tsp dried basil
1 – 14.5 oz can petite diced tomatoes, undrained
1 – 15.5 oz can of cannellini beans, rinsed
8 oz baby spinach, rough chopped
4 cups chicken broth
1 cup of small pasta
1/2 cup shredded parmesan cheese, plus extra
Heat oil in a large sauce pan over medium heat. Add the ground turkey, onion, and garlic, and cook until turkey is no longer pink. Drain excess liquid.
Return the pan to medium heat and add the red pepper, black pepper, oregano, basil, tomatoes, and beans. Stir well.
Add the spinach and continue cooking until the spinach begins to wilt.

Add the broth and bring to a low boil.
Add the pasta, and continue cooking at a low boil until the pasta is cooked. Stir a few times while cooking.
Remove from the heat and stir in the cheese.
If you so choose you can sprinkle a little more cheese on top when serving, because who doesn’t love a little extra cheese?

When re-heating any leftovers, you may want to add a little more chicken broth as it tends to absorb into the ingredients.
